Zucchini Delicious

  • 3 slices bacon, chopped
  • 1 cup onions, chopped
  • 3-1/2 cups zucchini, sliced
  • 2 tomatoes, sliced or 1 can (10 oz.) of whole tomatoes
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 Tablespoon picante sauce (optional)


In a large skillet, fry bacon slightly. Add onions, cook until tender. Add zucchini, tomatoes, salt, pepper and picante sauce. Cook, covered until zucchini is tender and most of sauce absorbed (about 20-25 minutes).
