Coles 735 Main Panko Fried Avocado with Crab Salad

Ingredients

  • Spicy Aioli
  • 1 C mayonnaise
  • 1 1⁄2 Tbsp rice wine vinegar
  • 1 tsp togarashi spice blend 1 1⁄2 Tbsp Sriracha
  • 1 1⁄2 Tbsp Sriracha (Combine all ingredients and mix thoroughly.)
  • Saffron Aioli
  • 1 C mayonnaise
  • 1 1⁄2 Tbsp rice wine vinegar
  • Pinch each of saffron, sugar, cayenne pepper, salt (Combine all ingredients and mix thoroughly.)
  • Crab Avocado Salad
  • 2 red peppers, finely diced
  • 1⁄2 red onion, finely diced 1 jalapeno, finely diced
  • 14 oz can coconut milk
  • 1 Tbsp lemongrass
  • 2 lemons, juiced and zested
  • 16 oz jumbo lump crab, fresh
  • Salt and pepper to taste (Mix thoroughly, gently stirring in crab at end.)
  • Panko Avocado
  • 1 C tempura flour
  • 1 C panko breadcrumbs
  • 6 avocados (1 per person)

Directions

Mix tempura according to manufacturer’s directions. 

Halve and peel avocados, dip in tempura and shake off excess. Coat in panko breadcrumbs and fry until golden brown in 350° oil. 

Decorate plates with both types of aioli. Place avocados on plate and fill with crab salad. 

Garnish with sliced scallions.
