The Harbor’s Harbor Chicken

Cheese, Pork, Poultry, Vegetables



  • 6 oz chicken breast, butterflied
  • Pinch salt
  • Pinch pepper
  • 1 oz honey mustard dressing
  • 1 oz cremini mushrooms, sliced
  • 2 slices bacon
  • 1 1/2 oz cheddar jack cheese mix, shredded
  • 1/4 oz green onions, sliced
  • Diced scallions


Season chicken breasts on both sides with salt and pepper. 

Grill chicken on a flat top grill or in cast-iron skillet on medium heat. 

While chicken is cooking, saute mushrooms in a separate skillet over medium high heat for 2 minutes. Remove from heat; set aside. 

Cook bacon until crispy; drain and set aside. Dice green onions; set aside. 

When chicken has reached 155°, place mushrooms on top of breast, followed by honey mustard, bacon and cheese. Cover with domed lid and allow cheese to melt completely. Check temperature of chicken to assure it has reached 165°; if not, continue cooking uncovered until it does. 

Place on plate and garnish with diced scallions.
