Zucchini Oatmeal Bars

  • Makes 24.


  • 1/2 cup raisins
  • 1 cup boiling water
  • 1/3 cup margarine, softened
  • 1/2 cup light brown sugar
  • 1 egg
  • 1-1/4 cups grated zucchini
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon freshly grated lemon peel
  • 1 cup whole-wheat flour
  • 1/2 cup quick-cooking oats
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 Tablespoon powdered sugar


Cover raisins with boiling water in small bowl. Soak 15 minutes and drain. Cream margarine and brown sugar in large mixing bowl until light and fluffy. Beat in egg and stir in zucchini. Add spices and lemon peel and mix well. Add mixture of flour, oats, and baking powder. Beat well until blended. Add vanilla and mix well. Stir in raisins. Spread into greased 9 x 13-inch baking pan. Bake at 350° for 20 to 25 minutes or until browned. Cool completely and sprinkle with powdered sugar. Cut into 24 bars.
