5 Minute Mini Fruit Tarts

Ingredients
- 8 oz cream cheese, softened
- 1 C powdered sugar
- 2 tsp vanilla
- Pinch of salt
- 1 tub Cool Whip, thawed, or 2 cups of already-made whipped cream
- 3 packs Athens phyllo tart shells
- 2 C fruit of choice, cut into small pieces
Directions
Whip together cream cheese, powdered sugar, vanilla and salt, scraping the sides until creamy. Fold in Cool Whip. Spoon about 2 teaspoons of this filling (more or less to your taste) into each tart shell. After each is filled, add fruit to the top. Serves: 48
