Backroad Burger Co. Yellowstone Bourbon Bacon Jam

Ingredients
- 3 lb bacon, diced
- 1 medium white onion, diced
- 1 ½ C brown sugar
- ½ C apple cider vinegar
- ½ C Yellowstone bourbon
Directions

Cook diced bacon over low heat, stirring frequently.

Once the bacon turns translucent, add the onion and stir.

When the onions are softened but not browned, remove the pan from heat.

Stir in the brown sugar, apple cider vinegar, and Yellowstone bourbon until fully incorporated.

Return the pan to medium heat and simmer, stirring frequently, until the mixture is caramelized and reduced to a jam-like consistency.

Serve as a hamburger topping or as a savory dip.
