Baked Chili Rellenos


  • 2 cans (7 oz.) green chilies (chopped)
  • 1-1/2 lbs. sausage
  • 1 lb. colby or cheddar cheese (grated)
  • 1/2 lb. Monterey Jack cheese (grated)
  • 1 medium onion (chopped)
  • Mix: 4 eggs
  • 2 Tablespoons flour
  • 1/2 teaspoon salt
  • 1 can (13 oz.) evaporated milk


Brown sausage and onion and drain.

Layer sausage, chilies and cheeses in a 2-quart casserole.

Pour over sausage and cheese and bake for 45 minutes at 350′.
