Easy Swedish Cream

  • 1 pkg unflavored gelatin (1 scant Tbsp)
  • 1⁄4 C cold water
  • 3⁄4 C sugar
  • 2 C heavy cream
  • 1⁄2 C milk
  • 16 oz sour cream
  • 1 tsp vanilla


Sprinkle gelatin over 1⁄4 cup cold water and let stand for 5 minutes.
Combine sugar, cream and milk in a heavy saucepan over medium high heat. Add gelatin and stir constantly until sugar and gelatin are dissolved. Cool, then gradually add sour cream, stirring to combine. Add vanilla.
Spray a 2-quart bowl with cooking spray. Pour in cream mixture and chill. When ready to serve, dip bowl in warm water 10 seconds, cover with upside-down serving platter and turn everything over. Cream should plop onto platter. Serve slices with fresh, seasonal fruit or fruit sauce. Serves 8.
