Pasta & Noodles, Seafood

  • Serves 4–6.

  • 2 Tablespoons olive oil
  • 1/2 onion, chopped
  • 1 Tablespoon chopped garlic
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon basil, dried
  • 1 Tablespoon Worcestershire sauce
  • 1/2 teaspoon Tabasco sauce
  • 2 cups diced, peeled, and seeded tomatoes
  • 2 Tablespoons sugar
  • 1/2 cup green onions, chopped
  • 3 cups chicken stock
  • 1 lb. linguine
  • 1 lb. fresh shrimp, peeled and deveined
  • 1/2 cup grated Parmesan cheese

Sauté onion in olive oil for approximately 2 minutes. Add garlic and stir. Add thyme, peppers, and basil; cook at low heat for 5 more minutes. Add everything else except pasta, shrimp, and cheese; cook over low heat for one hour. Meanwhile, cook pasta according to box directions. In large saucepan, sauté shrimp in a small amount of butter until almost done, about 3 or 4 minutes. Shrimp will be pink but not totally opaque. Add sauce mixture and cook for an additional 2 minutes. Add cooked pasta and toss with grated cheese.
