Ingredients

  • 8 slices bacon
  • 32 oz fresh ground beef
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 4 brioche hamburger buns
  • 4 oz chipotle mayonnaise, bottled
  • 4 oz onions, sliced thinly in rings
  • ½ C milk
  • ¼ C all-purpose flour
  • 1 Tbsp vegetable oil
  • 20 slices pickled jalapenos
  • 4 slices pepper jack cheese

Directions

Heat skillet or grill; cook bacon and set aside. 

Add salt and pepper to beef, mix with hands until combined. Form into four 8-ounce patties and chill for 1 hour prior to cooking. 

Separate buns, spread chipotle mayonnaise on top bun and prep toppings.

Dip sliced onions in milk and dredge in flour; cook on medium-high in large skillet with oil until brown. Add salt to taste. Drain on paper towels. 

In medium skillet, or on grill, cook burgers until internal temperature is 160–165°, turning burgers once and lightly pressing burger down. Cook about 5 minutes per side. Place cheese on burgers until it melts. Remove to plate. 

Place burgers on top of buns, top each with two slices of bacon, and divide onions and jalapenos on the burgers. Drizzle additional chipotle mayonnaise on top
