Blueberry Almond Salad


  • Serves 4.


  • 1/2 cup vegetable oil
  • 1/4 cup raspberry vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 5 oz. fresh spinach, torn
  • 5 oz. fresh romaine, torn
  • 3 oz. blue cheese, crumbled
  • 1-1/2 cups fresh blueberries
  • 1/2 cup slivered almonds, toasted


In jar with tight-fitting lid, combine the first five ingredients and shake well. In large salad bowl, toss the spinach, romaine, blue cheese, blueberries, and toasted almonds. Add salad dressing, tossing gently, and serve immediately.
