Roast Beef Roll-Ups


  • 1/4 cup 1% low-fat collage cheese
  • 1/4 cup horseradish, drained
  • 1 Tablespoon Dijon-style mustard
  • 1/4 cup fat-free mayonnaise
  • 18 thin slices lean roast beef
  • 1-1/2 cups alfalfa sprouts
  • 1/2 cup shredded fresh spinach


Combine first 3 ingredients in blender or food processor and process until smooth. Stir in mayonnaise.

Spread 1 Tablespoon cottage cheese mixture on each roast beef slice and divide alfalfa sprouts and shredded fresh spinach evenly on each slice.

Roll up, beginning with short side.

Arrange on cookie sheet, cover and chill several hours.

Serves 18.
