Ruth’s Skillet Chili

  • 1 lb. ground chuck roast
  • 1 (1.25 oz) packet chili seasoning, such as McCormick’s
  • 1 small onion, chopped
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can chili beans
  • 1 (10 oz) can Ro-Tel Original, with liquid
  • 2 Tbsp brown sugar


Cook hamburger meat with chopped onion in large cast-iron skillet. Drain grease. Add seasoning packet, tomato sauce, Ro-Tel, chili beans and two 15 oz cans water. Mix, then cook for 20 minutes on medium heat. Add brown sugar, and continue to cook until thickened. Enjoy with oyster crackers or saltines and shredded sharp cheddar cheese if desired. Serves 4–6.
