- 1 egg yolk, beaten
- 1/2 cup sugar
- 2 tablespoons distilled white vinegar
- 1/2 cup light cream or Miracle Whip
- 12 bananas, peeled
- 1 cup crushed peanuts
To make dressing, mix egg yolk, sugar, and vinegar. Bring to a boil, stirring constantly since it sticks easily. Remove from heat and slowly add cream. Chill before using.
To make salad, slice 4 bananas 1/8-inch thick into bowl. Cover bananas with light layer of dressing. Sprinkle with layer of peanuts. Repeat layers until all bananas are used.
