Nut Bars

Ingredients

  • CRUST: 1 cup flour
  • 1/2 cup softened butter
  • FILLING: 2 eggs
  • 1-1/2 cups, brown sugar
  • 3/4 cup coconut
  • 1 cup chopped pecans
  • 2 Tablespoons flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons vanilla
  • ICING: 2 Tablespoons butter
  • 1-1/2 cups powdered sugar
  • 3 Tablespoons orange juice
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest

Directions

Preheat oven to 350°.

Blend together crust ingredients until crumbly.

Press into 9-inch square pan and bake for 15 minutes.

Beat filling ingredients until well mixed and pour over crust and bake 20 minutes longer. Cool.

Beat icing ingredients until creamy and spread on top.

Sprinkle with chopped pecans and cut into squares.

Makes 16 squares.
