- 3 medium pears peeled, cored and sliced
- 1-1/2 teaspoons grated lemon rind
- 2-1/2 Tablespoons lemon juice
- 1/3 cup sugar
- 1 Tablespoon cornstarch
- 1 cup water
Combine first three ingredients in container of electric blender.
Process until smooth.
Combine pear mixture, sugar, cornstarch and water in a medium saucepan.
Bring mixture to a boil; reduce heat and cook, stirring constantly for one minute.
Remove from heat and cool.
Makes 2-3/4 cups.
